Crystallize Roses







Roses are one of the few edible flower varieties.


Roses can be crystallized to be used to decorate cakes, food tables and pastries. These enchanted roses look as if they were picked out of a fairy-tale garden. Crystallized roses are coated in a fine sugar, which gives them their magical look. When making your crystallized roses, use only pesticide- and chemical-free roses if the roses are to be used on food.


Instructions


1. Mix a tablespoon of powdered gum arabic into a tablespoon of rose water in a small bowl. Stir the mixture until it forms a paste.


2. Dip a new paintbrush into the mixture. Paint the mixture onto each petal of the rose.


3. Pour superfine sugar into a bowl. Hold the rose with the petals facing downward and dip the petals into the sugar. Tap the rose gently over the bowl as you pull it out of the sugar to shake off excess grains.


4. Set the rose aside and allow it to dry. Store the rose in an airtight container until needed.
